What I have read on different forums and in different topics 5 sec. a day is not a big deal. And well what is the actual difference between say 2 and 5 sec. a day; either way you have to reset on daily basis when you want your timepiece to be completely accurate with world time.
Your second question is also very annoying to me. I would like the second hand to be stopped when setting the time on a watch, but I think there is not much you can do about it other than accept that you own a wonderful watch which shows time pretty accurate.
