as I am unsure whether this is normal, just bad luck or a consequence of previous service attempts.

Gaskets are replaced during every service, otherwise water resistance cannot be guaranteed (gaskets suffer from being taken out and in again).

What strikes me is that you mention that you can wind the watch eternally, while you could not do that when the watch was new.

Do you have an automatic watch? IF so, there is not sensible stop in the winding mechanism as the mainspring is friction mounted. This is done to prevent it from damage due to overwinding by the rotor.

So, again IF you have an automatic watch, your story tell indicates it was first malfunctioning, but working correctly after your 2005 service.
